For Thanksgiving, Warm Pumpkin Bread Pudding

How good does this look for Thanksgiving? Pumpkin Bread Pudding takes bite-sized chunks of bread and soaks them in a rich custard made with cream, pumpkin puree, brown sugar, eggs, butter, vanilla, and spices (ground cinnamon, ginger, and cloves). Doesn't that sound delicious? This is the perfect dish to serve in cooler weather or when we need cheering up. Goes great on the table with a turkey dinner. Mmm
  • 1 cup heavy cream
  • 3/4 cup canned solid-pack pumpkin
  • 1/2 cup whole milk
  • 1/2 cup brown sugar
  • 2 large eggs plus 1 yolk
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground allspice
  • Pinch of ground cloves
  • 5 cups cubed (1-inch) day-old baguette or crusty bread
  • 3/4 stick unsalted butter, melted


Preheat oven to 350° with rack in middle.
Whisk together cream, pumpkin, milk, sugar, eggs, yolk, salt, and spices in a bowl.
Toss bread cubes with butter in another bowl, then add pumpkin mixture and toss to coat. Transfer to an ungreased 8-inch square baking dish and bake until custard is set, 25 to 30 min. Let it cool and then dig in!

  1. OMG *shudders*..... I just had a personal moment. I don't just like bread pudding. I am fascinated, delighted, and taken to a higher plane with a mouthful of good bread pudding. And a pumpkin-flavored bread pudding just..... well, it brings me to shudders.
    One quick note about bread pudding is that you want to let the moistened bread sit for 5 or 10 minutes before spreading into your baking dish. This extra time allows the creamy mixture to soak its way all the way to the middle of the dry cubes before the baking process begins.

    Be sure to ask someone in your grocery store's bakery section to show you where the day old bread is kept (it's not always obvious). The loaves are typically half the cost of what you'd pay for a loaf the day before, which is something to consider when buying the more expensive baguettes or good Italian bread.

  2. Kim responded: your right AJ, the recipe above calls for day old bread. And let it sit for 5 to 10 min. before spreading into baking dish? Good idea. I am so very good at patience anyway (NOT) thanks for the tip lovely.
